Method

Preparing the Charro Beans

    Soak the Beans

    In a large bowl, soak the pinto beans in water overnight or for at least 8 hours.

    Cook the Beans

    Drain the soaked beans and place them in a large pot with 6 cups of fresh water, chopped onion, minced garlic, chopped jalapeño, cumin, salt, and black pepper.

    Simmer

    Bring the mixture to a boil over medium heat, then reduce to low heat and let simmer for about 2 hours or until beans are tender. Stir occasionally and add more water if needed.

    Finish with Olive Oil

    Once the beans are cooked, stir in 2 tablespoons of olive oil and adjust seasoning if necessary. Keep warm.

Making the Classic Queso

    Melt the Cheese

    In a saucepan over medium heat, combine the cheese and milk. Stir until melted and smooth.

    Add Salsa

    Add the salsa to the melted cheese mixture and stir until well combined. Allow it to heat through for about 5 minutes.

Assembling the Loaded Bean Dip

    Layer the Dip

    In a large serving dish, layer the cooked charro beans at the bottom, followed by the classic queso on top.

    Add Toppings

    Top the queso with sour cream, pico de gallo, and chopped cilantro. Sprinkle with chile powder for an extra kick.

    Serve with Tortilla Chips

    Serve immediately with a side of corn tortilla chips for dipping.
