For the Mojo Shrimp

Marinate the Shrimp
In a large bowl, combine the lime juice, minced garlic, chopped cilantro, olive oil, salt, black pepper, and cumin. Add the shrimp and toss well to coat. Cover and refrigerate for at least 30 minutes.

Cook the Shrimp
Preheat a grill or grill pan over medium-high heat. Remove the shrimp from the marinade and grill for about 2-3 minutes on each side, or until the shrimp are opaque and cooked through. Remove from heat and set aside.
For the Poblano Rajas

Cook the Rajas
In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the sliced poblano peppers and onion. Sprinkle with salt and sauté for about 5-7 minutes, until the vegetables are tender and slightly charred. Remove from heat and set aside.
For the Grilled Pineapple

Prepare the Pineapple
In a bowl, combine the brown sugar and cinnamon. Sprinkle this mixture over the pineapple slices on both sides.

Assemble the Fajitas
Warm the flour tortillas on the grill for about 30 seconds on each side. On each tortilla, layer the grilled shrimp, poblano rajas, and a generous sprinkle of shredded Mexican cheese. Top with grilled pineapple and a dollop of sour cream.

Serve
Garnish each fajita with lime wedges and serve immediately. Enjoy your Fiesta!
