Cheese Dip Preparation

    Melt the Cheeses

    In a medium saucepan over low heat, combine the cheddar cheese, Monterey Jack cheese, cream cheese, and milk. Stir continuously until the cheeses are melted and smooth.

    Add Seasonings

    Stir in the diced jalapeño, garlic powder, onion powder, cumin, salt, and black pepper. Mix well until all ingredients are fully incorporated, and let simmer on low heat for 5 minutes.

Pico de Gallo Preparation

    Combine Ingredients

    In a bowl, combine the diced tomato, red onion, chopped cilantro, lime juice, and minced jalapeño. Stir until well mixed. Adjust seasoning with salt if needed.

Tortilla Chips Preparation

    Prepare Chips

    Preheat the oven to 350°F (175°C). Cut each corn tortilla into triangles and place them on a baking sheet. Drizzle with olive oil and sprinkle with chili powder and salt. Toss to coat evenly.

    Bake Chips

    Bake in the preheated oven for 10-12 minutes, or until crispy and golden. Remove from oven and let cool slightly.

Assembling the Dish

    In a serving bowl, pour the warm cheese dip and top with fresh pico de gallo. Serve alongside the baked tortilla chips for dipping. If desired, add cooked Mexican chorizo or dry-aged ground beef on top.
