Cheese Dip

Pico de Gallo

Tortilla Chips

Method

Cheese Dip

  1. 1

    Melt the Cheeses

In a medium saucepan over low heat, combine the shredded cheddar cheese, Monterey Jack cheese, and softened cream cheese. Stir until the cheeses are melted and smooth.

  2. 2

    Add Milk and Seasonings

Gradually add the milk while continuously stirring. Incorporate chopped jalapeño, garlic powder, onion powder, salt, and black pepper. Continue to stir until the mixture is creamy and well combined.

Pico de Gallo

  1. 3

    Prepare the Pico de Gallo

In a bowl, combine diced tomatoes, diced red onion, chopped cilantro, lime juice, and salt. Mix well and set aside to let the flavors meld.

Tortilla Chips

  1. 4

    Prepare the Chips

In a deep frying pan, heat vegetable oil over medium-high heat. Cut corn tortillas into triangles. Once the oil is hot, fry the tortilla pieces in batches until golden and crisp, about 2-3 minutes per batch.

  2. 5

    Season the Chips

Remove the fried chips and place them on a paper towel-lined plate. Sprinkle with chili powder and salt while still warm.

Optional Protein

  1. 6

    Cook the Protein

If using, cook the Mexican chorizo or ground beef in a skillet over medium heat until fully cooked, breaking it apart with a spoon. Drain excess grease if necessary.
