Taco Filling

    Prepare the Chicken

    In a bowl, combine the olive oil, chili powder, cumin, garlic powder, salt, and black pepper. Add the chicken breast and coat well with the spice mixture. Let it marinate for at least 15 minutes.

    Sauté the Vegetables

    Slice the bell peppers and onion. Heat a large skillet over medium-high heat. Add a bit of olive oil and sauté the sliced veggies until they are tender and slightly caramelized, about 5-7 minutes. Remove and set aside.

    Cook the Chicken

    In the same skillet, add the marinated chicken breast. Cook for about 6-8 minutes on each side or until fully cooked and internal temperature reaches 165°F. Remove from heat and let rest for a few minutes before slicing into strips.

Pico de Gallo

    Chop the Ingredients

    Dice the tomatoes and red onion. Chop the cilantro. Combine all chopped ingredients in a bowl.

    Squeeze the lime juice over the mixture and add salt to taste. Mix well and let it sit for 10 minutes to allow the flavors to meld.

    Prepare the Radish

    Thinly slice the radishes and place them in a small bowl.

    Pickle the Radish

    Add lime juice and salt to the radishes. Stir well and let them sit for at least 15 minutes to pickle.

Tacos

    Warm the Tortillas

    In a dry skillet, warm the flour tortillas over medium heat for about 30 seconds on each side until soft and pliable.

    Assemble the Tacos

    Place a few strips of chicken on each tortilla, followed by sautéed vegetables, a generous scoop of pico de gallo, a sprinkle of queso cotija, and a few lime-pickled radish slices.

    Enjoy the tacos warm with additional lime wedges on the side.
