Appetizer Preparation

    Prepare the Brie

    Place the Brie cheese on a serving platter, drizzle with honey, and sprinkle fresh thyme on top. Serve with sliced baguette.

    Cook the Filet Mignon

    Preheat the oven to 400°F (200°C). Season the filet mignon with salt and black pepper. Heat olive oil in a large skillet over medium-high heat. Sear the steaks for 3-4 minutes on each side until browned. Add crushed garlic and rosemary, then transfer to the oven and roast for 10-15 minutes for medium-rare. Remove from the oven and let rest.

    Make the Red Wine Sauce

    In the same skillet, add the red wine and bring to a boil, scraping the bottom of the pan to loosen browned bits. Reduce the sauce by half, then strain and serve over the filet mignon.

    Prepare the Chocolate Mousse

    In a saucepan, heat heavy cream until just simmering. Pour over chopped dark chocolate in a bowl and let sit for 2 minutes. Whisk until smooth. Chill for at least 30 minutes before serving with fresh raspberries on top.
