Fry the Corn Chips
Heat oil in a deep frying pan over medium-high heat. Once hot, carefully add corn chips in batches and fry until golden and crispy, about 2-3 minutes. Remove with a slotted spoon and drain on paper towels. Season with salt to taste.

Prepare the Sauces
While the chips are frying, heat the green sauce and red sauce separately in small saucepans over low heat until warmed through.

Heat the Black Beans
In a small saucepan, heat the black beans over medium heat until warmed through, about 5 minutes. Season with salt and pepper.

Assemble the Dish
On a serving plate, layer the fried corn chips. Drizzle half of the green sauce and half of the red sauce over the chips. Top with sour cream, crumbled queso fresco, and the cooked eggs. Serve with a side of warmed black beans.
