Preparation
1. Prepare the Potatoes
Boil the breakfast potatoes until tender, then drain and let them cool slightly. Dice them into cubes.
2. Cook the Eggs

In the same skillet, add sliced onions and mixed peppers. Sauté until they are soft and slightly caramelized.

In a bowl, layer the diced breakfast potatoes, followed by the black beans, sautéed vegetables, and grilled chicken or steak. Top with sunny side up eggs, sour cream, diced tomatoes, and queso fresco. Add Bravo cheese if desired.
