1. Prepare the Potatoes

Boil the breakfast potatoes until tender, then drain and let them cool slightly. Dice them into cubes.

2. Cook the Eggs

In a non-stick skillet, heat a little oil over medium heat. Crack the eggs into the skillet and cook until the whites are set but the yolks are still runny. Remove from heat.

3. Sauté the Vegetables

In the same skillet, add sliced onions and mixed peppers. Sauté until they are soft and slightly caramelized.

4. Heat the Black Beans

In a small saucepan, heat the black beans over medium heat until warm.

5. Grill the Chicken or Steak

If using chicken or steak, grill until fully cooked and slice it into strips.

Assembly

6. Assemble the Bowl

In a bowl, layer the diced breakfast potatoes, followed by the black beans, sautéed vegetables, and grilled chicken or steak. Top with sunny side up eggs, sour cream, diced tomatoes, and queso fresco. Add Bravo cheese if desired.
