    Prepare the Steak

    Tenderize the beef round steak with a meat mallet until it's about 1/2 inch thick. Season both sides with salt, black pepper, and paprika.

    Dredge the Steak

    Dip the steak in buttermilk, then dredge it in all-purpose flour, ensuring both sides are coated. Set aside.

    Fry the Steak

    Heat vegetable oil in a large skillet over medium-high heat. Fry the steak for 4-5 minutes on each side or until golden brown and cooked through. Remove from skillet and drain on paper towels.

    Make the Gravy

    In the same skillet, reduce heat to medium and add 1/4 cup of the remaining flour to the oil. Stir to form a roux and cook for 1-2 minutes. Gradually whisk in the milk until smooth, then add gravy seasoning. Cook until thickened, stirring frequently.

    Cook the Eggs

    In a separate pan, cook the eggs to your liking (sunny-side up, over-easy, etc.).

    Prepare the Breakfast Potatoes

    Dice the potatoes and boil them in salted water until tender. Drain and pan-fry them in a little oil until crispy.

    Place the fried steak on a plate, smother with gravy, and top with the cooked eggs. Serve alongside the breakfast potatoes.
