Tuna Suki Preparation

    Marinate the Tuna

    In a medium bowl, combine the soy sauce, sesame oil, grated ginger, minced garlic, and chopped green onions. Whisk until well combined. Place the fresh tuna steak in a shallow dish and pour the marinade over it, ensuring that it is fully coated. Cover and refrigerate for at least 30 minutes.

    Sear the Tuna

    Heat a non-stick skillet over medium-high heat. Remove the tuna from the marinade, allowing excess to drip off. Sear the tuna steak for about 1-2 minutes on each side for rare, or longer if desired. Remove from heat and let it rest before slicing.

    Prepare the Salsa

    In a medium bowl, combine the diced avocado, diced mango, finely chopped red onion, and chopped cilantro. Drizzle with sake and lime juice. Season with salt and black pepper to taste. Gently toss to combine, being careful not to mash the avocado.

Ponzu Sauce Preparation

    Make the Ponzu Sauce

    In a small bowl, whisk together the soy sauce, yuzu juice (or lemon juice), rice vinegar, mirin, and dashi stock until well combined. Set aside.

    Plate the Dish

    Slice the seared tuna steak into thin strips. Arrange the tuna slices on a serving plate and top with the sake avocado mango salsa. Drizzle the ponzu sauce over the dish and serve immediately.
