Method
Prepare Sushi Rice

Rinse the Rice
Place the sushi rice in a fine mesh strainer and rinse under cold water until the water runs clear, about 2-3 minutes.

Cook the Rice
In a rice cooker or saucepan, combine the rinsed sushi rice and 2.5 cups of water. Cook according to the rice cooker instructions or bring to a boil, then reduce heat to low, cover, and simmer for 18-20 minutes until water is absorbed.

Season the Rice
In a small bowl, mix rice vinegar, sugar, and salt until dissolved. Once the rice is cooked, transfer it to a large bowl and gently fold in the vinegar mixture. Allow it to cool to room temperature.

Prepare the Fish
If using raw fish, ensure it is sushi-grade and cut into long strips.

Prepare Cream Cheese
Soften the cream cheese to room temperature for easy spreading.
Assemble Sushi Rolls

Lay Out Nori
Place a nori sheet shiny side down on a bamboo sushi mat or a clean surface.

Spread the Rice
Wet your hands to prevent sticking, then take a handful of sushi rice and spread it evenly over the nori, leaving about 1 inch at the top edge.

Add Fillings
Layer the cucumber, avocado, fish, and cream cheese in a line across the rice, about 1 inch from the bottom edge.

Roll the Sushi
Using the bamboo mat, lift the edge closest to you and roll it away from you, tucking the filling in as you go. Roll tightly but gently.

Seal the Roll
Moisten the top edge of the nori with a little water to seal the roll.

Slice and Serve
Using a sharp knife, slice the roll into 6-8 pieces. Serve with soy sauce, wasabi, and pickled ginger.
