Method

Prepare Sushi Rice

    Rinse and Soak

    Rinse the sushi rice under cold water until the water runs clear. Then, soak the rice in fresh water for 30 minutes.

    Cook the Rice

    In a rice cooker or pot, combine the soaked sushi rice and 2.5 cups of water. Cook according to your rice cooker's instructions or bring to a boil, then reduce heat to low, cover, and simmer for 20 minutes.

    Season the Rice

    Once cooked, transfer the rice to a large bowl. In a small saucepan, heat the rice vinegar, sugar, and salt until dissolved. Pour this mixture over the rice and gently fold to combine. Let the rice cool to room temperature.

Prepare Fillings

    Slice the Fillings

    Thinly slice the fresh salmon, avocado, and cucumber into long strips. Set aside.

    Prepare Cream Cheese

    Soften the cream cheese if necessary and cut it into thin strips.

Assemble Sushi

    Prepare the Rolling Station

    Place a bamboo sushi mat on a clean surface and lay a sheet of nori on top, shiny side down.

    Add Sushi Rice

    With wet hands, take a handful of sushi rice and spread it evenly over the nori, leaving about 1 inch at the top edge free.

    Layer Fillings

    Place a few slices of salmon, avocado, cucumber, and a strip of cream cheese in the center of the rice-covered nori.

    Roll the Sushi

    Using the bamboo mat, carefully roll the sushi away from you, pressing gently but firmly to keep the fillings inside. Roll until you reach the free edge of the nori.

    Seal the Roll

    Moisten the free edge of the nori with a little water to seal the roll. Give it a gentle squeeze to secure.

    Slice the Roll

    Using a sharp knife, slice the roll into 6-8 pieces. Wipe the knife with a damp cloth between cuts for clean slices.

Serve

    Presentation

    Arrange the sushi pieces on a platter. Serve with soy sauce, wasabi, and pickled ginger on the side.
