Sushi Rice Preparation

Rinse Sushi Rice
In a fine mesh strainer, rinse 2 cups of sushi rice under cold water until the water runs clear. This removes excess starch.

Cook Rice
In a rice cooker or pot, combine the rinsed rice and 2.5 cups of water. Cook according to the rice cooker's instructions or bring to a boil, then reduce to low heat, cover, and simmer for 20 minutes.

Season Rice
In a small saucepan over low heat, combine 1 tbsp rice vinegar, 1 tbsp sugar, and 1 tsp salt. Stir until dissolved. Once the rice is cooked, let it cool slightly, then fold in the vinegar mixture gently. Let it cool completely.
Sashimi Preparation

Slice Fish
Using a sharp knife, slice the fresh salmon and tuna fillets into thin, even slices. Arrange the slices on a plate.

Prepare Octopus
Slice the cooked octopus into thin rounds and add to the plate with salmon and tuna.

Serve with Condiments
Place a small dollop of wasabi and a small bowl of soy sauce on the side for dipping.
Nigiri Preparation

Prepare Shrimp Nigiri
Take a small amount of sushi rice and mold it into an oval shape. Place a slice of cooked shrimp on top. Repeat for the remaining shrimp.

Prepare Eel Nigiri
Mold another portion of sushi rice into an oval shape and place a slice of fresh eel on top.

Wrap Nori
Cut nori sheets into strips and wrap around the nigiri to secure the toppings in place.

Serve pickled ginger alongside the sashimi and nigiri for cleansing the palate.
