Prepare the Mochi Dough

    Mix the Ingredients

    In a large mixing bowl, combine the sweet rice flour and granulated sugar. Gradually add the water while stirring until the mixture is smooth and well combined.

    Cook the Mixture

    Transfer the mixture to a microwave-safe bowl. Cover the bowl with plastic wrap, leaving a small vent for steam to escape. Microwave on high for 1 minute, then stir. Microwave for an additional 1-2 minutes until the dough becomes thick and sticky.

    Dust and Cool

    Prepare a clean surface by dusting it with cornstarch. Carefully transfer the hot mochi dough onto the surface. Dust the top of the dough with more cornstarch and let it cool slightly until it is manageable.

Fill the Mochi

    Shape the Mochi

    Once the dough is cool enough to handle, divide it into small portions (about 1.5 ounces each). Flatten each portion into a round disc using your hands or a rolling pin, dusting with more cornstarch as needed to prevent sticking.

    Add Ice Cream

    Scoop a small amount of your chosen ice cream (about 1 tablespoon) and place it in the center of each mochi disc. Fold the edges of the disc over the ice cream, pinching them together to seal the filling inside.

    Shape and Freeze

    Once sealed, gently shape the mochi into a ball or desired shape. Place each filled mochi on a baking sheet lined with parchment paper and freeze for at least 2 hours to firm up.
