    Marinate the Lamb Chops

    In a bowl, whisk together olive oil, minced garlic, chopped rosemary, chopped thyme, lemon juice, salt, and black pepper. Add the lamb chops to the marinade, ensuring they are well-coated. Cover and refrigerate for at least 1 hour, preferably overnight.

Prepare Barbecue Sauce

    Make the Barbecue Sauce

    In a saucepan over medium heat, combine ketchup, brown sugar, apple cider vinegar, Worcestershire sauce, paprika, salt, and black pepper. Stir well and let it simmer for about 10 minutes until thickened. Remove from heat and set aside.

Grilling

    Grill the Lamb Chops

    Preheat your grill to medium-high heat. Remove the lamb chops from the marinade, letting the excess drip off. Place the chops on the grill and cook for about 4-5 minutes on each side for medium-rare, brushing with the barbecue sauce during the last few minutes of cooking.

    Rest and Serve

    Once cooked to your desired doneness, remove the lamb chops from the grill and let them rest for 5 minutes. Serve with the remaining barbecue sauce on the side.
