    Prepare the Steaks

    Remove the filet mignon steaks from the refrigerator and let them sit at room temperature for about 30 minutes before cooking. This helps the steak cook more evenly.

    Season the Steaks

    Generously season both sides of the filet mignon steaks with salt and black pepper.

    Heat the Pan

    In a large skillet, heat the olive oil over medium-high heat until it shimmers.

    Sear the Steaks

    Once the oil is hot, place the seasoned filet mignon steaks in the skillet. Sear for about 4-5 minutes on one side without moving them to develop a nice crust.

    Flip the Steaks

    Carefully flip the steaks using tongs and sear the other side for another 4-5 minutes for medium-rare, adjusting the time for your preferred doneness.

    Butter Baste

    Reduce the heat to medium. Add the butter, garlic cloves (smashed), and rosemary to the pan. As the butter melts, tilt the pan slightly and use a spoon to baste the steaks with the melted butter for about 1-2 minutes.

    Rest the Steaks

    Remove the filet mignon from the skillet and transfer them to a cutting board. Tent with aluminum foil and let them rest for at least 5 minutes before slicing.
