Prepare the Noodles
Cook the udon noodles according to package instructions. Drain and set aside.

Slice the Beef
Thinly slice the beef sirloin against the grain.

Chop the Vegetables
Chop the broccoli into florets, julienne the carrot, slice the bell pepper, and chop the green onions.

Prepare the Aromatics
Mince the garlic and grate the ginger.

Marinate the Beef
In a bowl, mix the sliced beef with soy sauce and sesame oil. Let it marinate for about 10 minutes.

Stir-Frying
In a large frying pan or wok, heat a tablespoon of oil over medium-high heat. Add the marinated beef and stir-fry until browned, about 3-4 minutes. Remove and set aside.

Combine and Season
Return the cooked beef to the pan along with the cooked udon noodles. Toss everything together and season with black pepper to taste. Stir-fry for another 2-3 minutes until heated through.

Garnish and Serve
Remove from heat and garnish with chopped green onions. Serve hot.
