Preparing the Rice

Cook the Arborio Rice
In a medium saucepan, bring the vegetable broth to a boil. Add the Arborio rice, reduce the heat to low, cover, and let simmer for about 18-20 minutes until the rice is creamy and tender. Stir occasionally to prevent sticking.

In a separate skillet, heat a tablespoon of oil over medium heat. Add the chopped onion and minced garlic, sauté until the onion is translucent, about 5 minutes.

Once the rice is cooked, remove it from heat and mix in the sautéed onions, garlic, grated Parmesan cheese, beaten egg, salt, and black pepper. Allow the mixture to cool to room temperature.

Once the rice mixture is cool, take a small portion of the rice and flatten it in your hand. Place a cube of mozzarella cheese and a few peas in the center, then mold the rice around it to form a ball. Repeat until all the rice is used.
