Prepare Sushi Rice

Rinse the Rice
Place the sushi rice in a fine-mesh sieve and rinse under cold water until the water runs clear. This removes excess starch.

Cook the Rice
In a medium saucepan, combine rinsed rice and water. Bring to a boil over medium heat, then cover and reduce heat to low. Cook for 18-20 minutes until the water is absorbed.

Season the Rice
In a small bowl, combine rice vinegar, sugar, and salt. Microwave for 30 seconds to dissolve the sugar and salt. Once the rice is cooked, transfer to a large bowl and gently fold in the vinegar mixture. Allow to cool to room temperature.
Assemble Nigiri

Form the Rice
Wet your hands with a mixture of water and a bit of rice vinegar to prevent sticking. Take a small amount of sushi rice (about 2 tablespoons) and form it into an oval shape.

Add Akami
Place a slice of fresh Akami tuna on top of each rice mound, gently pressing down to secure the fish.

Serve
Arrange the nigiri on a plate. Serve with soy sauce, wasabi, and pickled ginger on the side.
