    Cook the Potatoes

    In a pot, bring salted water to a boil. Add the gem potatoes and cook for about 15 minutes or until tender. Drain and set aside.

    In a separate pot, place the eggs and cover with water. Bring to a boil and then reduce to a simmer for 7 minutes. Remove the eggs, cool under cold water, then peel and cut in half.

    In the same pot of boiling water, add the green beans and cook for 3-4 minutes until bright green and tender-crisp. Drain and rinse in cold water to stop the cooking.

    In a small bowl, whisk together the olive oil, red wine vinegar, Dijon mustard, salt, and black pepper until emulsified.

    In a large bowl or platter, combine the drained albacore tuna, olives, cherry tomatoes, cooked gem potatoes, green beans, and halved eggs.
