Preparing the Fries

Cut the Potatoes

Wash and peel the russet potatoes. Cut them into thick strips, about 1/4 inch wide.

Soak the Potatoes

Place the cut potatoes in a large bowl of cold water and soak for at least 30 minutes to remove excess starch.

Dry the Potatoes

Drain and rinse the potatoes, then dry them thoroughly with a clean kitchen towel.

Heat the Oil

In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C).

Fry the Potatoes

Carefully add the dried potato strips to the hot oil in batches. Fry until golden brown and crispy, about 4-5 minutes per batch.

Drain and Season

Remove the fries from the oil and drain on paper towels. Sprinkle with salt while still hot.

Making the Smoked Paprika Aioli

Combine Ingredients

In a bowl, mix together the mayonnaise, minced garlic, smoked paprika, lemon juice, and salt until well combined.

Chill

Cover the aioli and refrigerate for at least 30 minutes to let the flavors meld.
