Start by sanitizing all brewing equipment to ensure a clean fermentation process.

Preparation

Heat 5 gallons of water to 165°F (74°C). Add the pale malt, caramel malt, and Munich malt to the water. Maintain the temperature for 60 minutes, stirring occasionally.

Mashing

After mashing, sparge the grains with hot water to collect the wort, aiming for a final volume of 5 gallons.

Sparging

Bring the wort to a boil. Once boiling, add Cascade hops and boil for 60 minutes. Add Citra, Centennial, and Simcoe hops in the last 15 minutes of the boil.

Boiling

Cool the wort quickly to around 70°F (21°C) using a wort chiller or an ice bath.

Cooling

Transfer the cooled wort to a sanitized fermenter. Pitch the American Ale yeast and seal the fermenter. Allow it to ferment for 1-2 weeks at 68-72°F (20-22°C).

Fermentation

Once fermentation is complete, dissolve priming sugar in a small amount of water and add it to the beer before bottling. Bottle the beer and cap securely.

Bottling

Let the bottled beer condition for 2 weeks at room temperature before chilling and enjoying.
