Pomegranate Granita

Prepare the Granita
In a saucepan, combine pomegranate juice, sugar, and lemon juice. Heat gently until the sugar dissolves. Pour the mixture into a shallow dish and freeze for about 4 hours, scraping with a fork every 30 minutes to create a granita texture.

Make Raspberry Pearls
In a small saucepan, combine raspberry puree and water. Sprinkle agar-agar over the mixture and bring to a boil, stirring continuously. Once boiling, remove from heat and let cool slightly. Using a dropper, drop the mixture into a bowl of cold oil to form pearls. Let them set for 10 minutes, then rinse with water.
Marinated Shallots

Marinate the Shallots
Peel and slice shallots thinly. In a bowl, combine shallots, red wine vinegar, sugar, and salt. Mix well and let sit for at least 30 minutes to marinate.
Assemble the Dish

Combine and Serve
Shuck the Fanny Bay oysters and place them on a serving platter. Top each oyster with a spoonful of pomegranate granita, a few raspberry pearls, and some marinated shallots. Serve immediately and enjoy!
