Seafood Chowder Preparation

Cook the Bacon
In a large pot, cook the bacon over medium heat until crispy. Remove the bacon and set aside, leaving the drippings in the pot.

Add the Clam Fumet
Pour in the clam fumet and bring to a simmer.

Add Seafood
Add mussels and clams to the pot. Cover and let cook for about 5 minutes, or until the shells open.

Add Salmon
Cut the salmon fillet into bite-sized pieces and add to the pot along with the heavy cream. Cook for an additional 5-7 minutes until the salmon is cooked through.

Season
Season with salt and black pepper to taste. Stir in the butter until melted.

Serve
Ladle the chowder into bowls, crumble the reserved bacon on top, and garnish with fresh parsley. Enjoy!
