Preparation

    Roasting the Bone Marrow

    Preheat the oven to 400°F (200°C). Place the bone marrow pieces cut-side up on a baking sheet. Roast for 15-20 minutes until the marrow is soft and starting to brown.

    Preparing the Striploin

    Season the striploin with salt and pepper. Heat a skillet over high heat and sear the steak for 3-4 minutes on each side for medium-rare. Remove from heat and let it rest for 5 minutes before slicing.

    Sautéing Broccolini and Mushrooms

    In the same skillet, add a little olive oil and sauté the broccolini for 3-4 minutes until tender. Remove and set aside. Add more oil if necessary and sauté the seasonal mushrooms until browned, about 5 minutes.

    Making the Sauce au Foie

    In a saucepan, melt the butter and sauté the chopped shallots until translucent. Add the white wine and let it reduce by half. Stir in the beef stock and let it simmer for 10 minutes. Finally, blend in the foie gras until smooth, and season with salt and pepper.

    Preparing Pomme Paillasson

    Grate the potatoes and mix with a pinch of salt. Form the mixture into round patties and pan-fry in a skillet until golden brown and crispy on both sides, about 5-6 minutes.

    Plating

    On a plate, arrange the sautéed broccolini, sliced striploin, roasted bone marrow, and seasonal mushrooms. Place the pomme paillasson on the side and drizzle the sauce au foie over the meat. Serve immediately.
