Method

Preparation

  1. 1

    Clean the Seafood

Rinse the mussels and clams under cold water to remove any sand or debris. Discard any that are open and do not close when tapped.

  2. 2

    Prepare the Broth

In a large pot over medium heat, add the nduja and cook for 2-3 minutes until it starts to melt. Add the minced garlic and sauté for another minute until fragrant.

  3. 3

    Add Liquids

Pour in the white wine and vegetable broth, stirring to combine. Bring the mixture to a simmer.

  4. 4

    Add the Seafood

Add the cleaned mussels and clams to the pot. Cover and cook for about 5-7 minutes, until the shellfish have opened up. Discard any that remain closed.

  5. 5

    Season the Broth

Stir in the chopped parsley, red pepper flakes, salt, and black pepper to taste.

  6. 6

    Prepare the Baguette

While the broth is cooking, slice the baguette and brush with olive oil. Toast in the oven or on a grill until golden brown.

Serving

  1. 7

    Serve

Ladle the mussels and clams into bowls with plenty of broth. Serve with the toasted baguette on the side for dipping.
