Soup Preparation

    Sauté Onions

    In a large pot over medium heat, add olive oil. Once hot, add the sliced onions and cook, stirring regularly, until they are soft and caramelized, about 20-25 minutes.

    Deglaze with Wine

    Pour in the red wine and scrape the bottom of the pot to deglaze. Allow the wine to reduce for about 5 minutes.

    Add Broth and Seasonings

    Add the beef broth, thyme, bay leaf, salt, and black pepper. Bring the mixture to a simmer and let it cook for 30 minutes to develop the flavors.

    Remove Bay Leaf

    After 30 minutes, remove the bay leaf and adjust seasoning to taste.

Crouton Preparation

    Prepare Croutons

    Preheat the oven to 350°F (175°C). Brush the baguette slices with melted butter and place them on a baking sheet. Bake for 10-15 minutes until golden and crispy.

Final Assembly

    Assemble and Serve

    Ladle the soup into oven-safe bowls. Place a few croutons on top and generously sprinkle with gruyere cheese. Broil in the oven for 3-5 minutes until the cheese is bubbly and golden. Serve immediately.
