Making the Chocolate Mousse

    Melt the Chocolate

    Chop the dark chocolate into small pieces and place them in a heatproof bowl. Melt the chocolate over a pot of simmering water, stirring until smooth. Remove from heat and let cool slightly.

    Prepare the Egg Mixture

    In a separate bowl, whisk the egg yolks and sugar until pale and creamy. Stir in the melted chocolate and vanilla extract until well combined.

    Whip the Cream

    In another bowl, whip the heavy cream until soft peaks form. Gently fold the whipped cream into the chocolate mixture until combined.

    Fold in Egg Whites

    In a clean bowl, beat the egg whites until stiff peaks form. Carefully fold the egg whites into the chocolate mixture until no white streaks remain.

    Chill the Mousse

    Divide the mousse into serving dishes and refrigerate for at least 2 hours or until set.
