    In a medium saucepan, combine 1 cup of brown rice with 2 cups of water. Bring to a boil, then reduce heat to low. Cover and simmer for about 40-45 minutes, or until the rice is tender and the water is absorbed. Remove from heat and let it sit, covered, for 5 minutes.

    In a large bowl, combine the shrimp with olive oil, chili powder, cumin, garlic powder, salt, and black pepper. Toss to coat the shrimp evenly in the spices.

Cooking

    Cook the Shrimp

    Heat a large skillet over medium-high heat. Add the seasoned shrimp to the skillet and cook for about 2-3 minutes on each side, or until they are pink and opaque. Remove from heat.

    In the same skillet, add the diced red onion and red bell pepper. Sauté for 3-4 minutes until they are softened. Add the corn and cook for an additional 2 minutes.
