Preparation

Cooking the Pasta

1. Boil the Water

In a large pot, bring water to a boil. Add salt once boiling.

2. Cook the Fettuccine

Add fettuccine pasta to the boiling water. Cook according to package instructions until al dente, usually about 8-10 minutes.

3. Drain the Pasta

Once cooked, drain the pasta and set aside. Reserve a cup of pasta water for later use.

Preparing the Chicken

4. Season the Chicken

Season the chicken breasts with salt and black pepper on both sides.

5. Dredge the Chicken

Set up a breading station with three bowls: one with flour, one with beaten eggs, and one with breadcrumbs. Dredge each chicken breast in flour, dip in eggs, and coat with breadcrumbs.

6. Cook the Chicken

In a large skillet, heat olive oil over medium heat. Add the breaded chicken breasts and cook for about 4-5 minutes on each side until golden brown and cooked through. Remove and set aside.

Making the Sauce

7. Sauté the Garlic

In the same skillet used for chicken, add minced garlic and sauté for about 1 minute until fragrant.

8. Add Marinara Sauce

Pour in marinara sauce, and add dried oregano and dried basil. Stir and let simmer for about 5 minutes.

Combining Everything

9. Combine Pasta and Sauce

Add the drained fettuccine to the sauce and toss to combine. If the sauce is too thick, add reserved pasta water a little at a time until desired consistency is reached.

10. Add Chicken and Cheese

Slice the cooked chicken breasts and place them over the pasta. Sprinkle mozzarella and Parmesan cheese on top.

11. Melt the Cheese

Cover the skillet and let the cheese melt over low heat for about 2-3 minutes.
