    Prepare the Onions

    Peel the onions and slice them into 1/4 inch thick rings. Separate the rings and set aside.

    Make the Batter

    In a large bowl, mix together the flour, cornstarch, baking powder, salt, and black pepper. Gradually whisk in the cold sparkling water until the batter is smooth and slightly thick.

    Coat the Onion Rings

    Dip each onion ring into the batter, allowing any excess to drip off, then coat with breadcrumbs.

    Heat the Oil

    In a deep saucepan or fryer, heat the oil to 350°F (175°C).

    Fry the Onion Rings

    Carefully add the coated onion rings to the hot oil in batches, frying until golden brown and crispy, about 2-3 minutes per batch.

    Drain and Serve

    Remove the onion rings with a slotted spoon and place them on paper towels to drain excess oil. Serve hot with your favorite dipping sauce.
