Prepare the Catfish
In a large bowl, soak the catfish fillets in buttermilk for at least 30 minutes to tenderize and flavor the fish.

Make the Breading
In a separate bowl, mix together the flour, cornmeal, salt, black pepper, paprika, and cayenne pepper.

Dredge the Catfish
Remove the catfish from the buttermilk, allowing excess to drip off. Dredge each fillet in the flour mixture, ensuring an even coating.

Heat the Oil
In a large, deep skillet or fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Catfish
Carefully place the coated catfish fillets in the hot oil, cooking in batches if necessary. Fry for about 5-7 minutes on each side, or until golden brown and crispy.

Drain and Serve
Remove the fried catfish from the oil and place on a paper towel-lined plate to drain excess oil. Serve hot with house-made sides.
