    Prepare Eggplant

    Slice the eggplants into 1/2-inch thick rounds, sprinkle with salt, and let sit for 30 minutes to draw out moisture. Rinse and pat dry.

    Breading Station

    Set up a breading station with three bowls: one with flour, one with beaten eggs, and one with a mixture of breadcrumbs and half of the grated Parmesan cheese.

    Bread the Eggplant

    Dredge each eggplant slice in flour, dip into the egg, and then coat with the breadcrumb mixture. Place on a baking sheet.

    Bake Eggplant

    Preheat the oven to 375°F (190°C). Drizzle olive oil over the breaded eggplant and bake for 25-30 minutes until golden brown, flipping halfway through.

    Layer the Dish

    In a baking dish, layer half of the baked eggplant, half of the marinara sauce, half of the remaining Parmesan, and half of the mozzarella. Repeat with the remaining ingredients.

    Bake the assembled dish for an additional 20 minutes until bubbly and golden.

    In a saucepan, combine 1 cup of heavy cream, 1/2 cup grated Romano cheese, and salt to taste. Heat until cheese is melted and sauce is smooth.
