Grilled Chicken and Sauteed Vegetables
Cooking Instructions
1. Marinate the Chicken
In a bowl, combine olive oil, salt, and black pepper. Add chicken breasts and coat well. Let them marinate for at least 30 minutes.
2. Grill the Chicken
Preheat the grill to medium-high heat. Grill the marinated chicken breasts for about 6-7 minutes on each side, or until fully cooked and juices run clear. Remove from the grill and let rest.
3. Sauté the Vegetables
In a large skillet, heat butter over medium heat. Add minced garlic and sauté for 1 minute. Add bell peppers, zucchini, and red onion. Sauté for about 5-7 minutes, or until vegetables are tender but still crisp. Season with salt and pepper to taste.
4. Serve
Plate the grilled chicken alongside the sautéed vegetables. Drizzle with your choice of Artichoke Caper Beurre Blanc or Mushroom Marsala sauce.
