    Prepare the Kakuni

    In a pot, simmer the pork belly in water for about 2 hours, or until tender. Remove, cool, and slice into bite-sized pieces.

    Make the Broth

    In a large pot, combine chicken broth, shoyu tare, chili paste, minced garlic, grated ginger, diced onion, chopped lemongrass, and sliced shallots. Bring to a simmer and cook for 30 minutes to allow flavors to meld.

    Prepare Vegetables

    Chop the cabbage, chives, and scallions. Set aside.

    Assemble the Ramen

    In bowls, place a portion of cooked ramen noodles, ladle the hot broth over the noodles, and top with kakuni, cabbage, chives, and scallions.

    Serve

    Garnish with additional chives and scallions if desired. Serve hot.
