Sausage Preparation and Glaze

1. Prepare the Sausage Mixture

In a large mixing bowl, combine the Kurobuta pork, salt, black pepper, minced garlic, grated ginger, sugar, soy sauce, and sake. Mix thoroughly until all ingredients are well incorporated.

2. Stuff the Sausages

Rinse the casings thoroughly under cold water. Stuff the sausage mixture into the casings, ensuring they are filled without air pockets. Twist sausages into desired lengths and tie off the ends.

3. Chill the Sausages

Place the stuffed sausages in the refrigerator for at least 2 hours, or overnight for better flavor.

4. Prepare the Glaze

In a small saucepan, combine 1/4 cup soy sauce, 2 tbs honey, and 1 tsp chili flakes. Simmer over low heat until slightly thickened. Set aside.

5. Cook the Sausages

Preheat your grill or skillet over medium heat. Cook the sausages for about 10-15 minutes, turning occasionally until they are browned and cooked through.

6. Glaze the Sausages

During the last few minutes of cooking, brush the sausages with the prepared glaze to caramelize them slightly.

7. Serve

Remove sausages from the grill/skillet and allow to rest for a few minutes. Slice and serve with your choice of sides.
