    Prepare the Kakuni

    In a pot, bring water to a boil. Add the pork belly and blanch for about 5 minutes. Drain and rinse with cold water.

    Cook the Pork

    In a separate pot, add the blanched pork belly back in with enough water to cover. Add soy sauce, mirin, and sugar. Simmer on low heat for about 2 hours until tender. Once cooked, remove from liquid and slice into cubes.

    Make the Broth

    In a large pot, heat the chicken broth over medium heat. Stir in the miso paste until fully dissolved.

    Add Vegetables

    Add the chopped napa cabbage to the simmering broth. Cook for about 5 minutes until wilted.

    Assemble the Ramen Bowl

    In bowls, ladle the miso broth with cabbage. Top with kakuni (pork belly), chives, and scallions. Drizzle with roasted chili oil to taste.
