Prepare the Wings
Rinse the chicken wings under cold water and pat them dry with paper towels. In a large bowl, combine the flour, cornstarch, salt, and black pepper. Toss the wings in the flour mixture until fully coated.

First Fry
In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C). Fry the wings in batches for about 8-10 minutes or until golden brown. Remove and drain on paper towels.

Make the Miso Sake Glaze
In a saucepan over medium heat, combine the miso paste, sake, soy sauce, honey, and sesame oil. Stir until the mixture is smooth and simmer for about 5 minutes until slightly thickened.

Second Fry
Increase the oil temperature to 375°F (190°C). Fry the wings a second time for 4-5 minutes until they are extra crispy. Drain on paper towels again.

Glaze the Wings
In a large bowl, toss the crispy wings with the miso sake glaze until evenly coated.

Serve
Garnish with chopped green onions and sesame seeds. Serve immediately while hot.
