    Prepare the Pork Belly

    Cut the pork belly into large cubes (about 2 inches each).

    Sear the Pork Belly

    In a large pot, add the pork belly and sear over medium-high heat until browned on all sides. This should take about 10-15 minutes.

    Add Ingredients

    Once the pork belly is browned, add water, soy sauce, mirin, sugar, ginger, and scallions to the pot. Stir to combine.

    Simmer

    Bring the mixture to a boil, then reduce the heat to low. Cover the pot and let it simmer for about 2 hours, or until the pork is tender.

    Add Hard-Boiled Eggs (Optional)

    If using, add the hard-boiled eggs to the pot during the last 30 minutes of cooking to let them absorb the flavors.

    Season and Serve

    After cooking, taste the broth and season with black pepper to taste. Serve the kakuni with the sauce, garnished with extra scallions if desired.
