Prepare the Rice
Cook the steamed rice according to package instructions. Once cooked, set aside and keep warm.
Make the Sake-Soy Glaze
In a small saucepan, combine sake, soy sauce, and sugar. Heat over medium heat and stir until the sugar dissolves. Let it simmer for about 2-3 minutes until slightly thickened. Remove from heat.
Prepare the Kale
In a bowl, whisk together miso paste, sesame oil, and water until smooth. Add the kale and massage the dressing into the leaves until well coated. Let it sit for 5 minutes.
Assemble the Bowl
In a serving bowl, layer the steamed rice as the base. Top with pickled vegetables, the miso-dressed kale, and drizzle the sake-soy glaze over the top.
Serve
