Preparation and Cooking
Make the Bao Buns
In a bowl, mix warm water, sugar, and yeast. Let it sit for 5-10 minutes until foamy. Combine flour, baking powder, and salt in another bowl. Add the yeast mixture and milk, knead until smooth. Let it rise for 1 hour or until doubled in size.
Shape and Steam the Buns
Divide the dough into small balls, flatten them, and form into oval shapes. Place them on parchment paper squares. Let them rise for another 30 minutes. Steam for about 10-12 minutes until fluffy.
Prepare the Filling
While the buns are steaming, mix mayonnaise and spicy miso paste together in a bowl. Set aside.
Assemble the Bao Buns
Once the buns are steamed, carefully open each bun. Fill with shredded cabbage, pickled cucumber slices, and drizzle with spicy miso-mayo.
