    Prepare the Vegetables

    Peel and dice the potatoes, carrots, and parsnips into small cubes.

    In a large skillet, heat olive oil over medium heat. Add the diced potatoes, carrots, and parsnips. Season with salt and black pepper. Cook for about 10-15 minutes, stirring occasionally, until the vegetables are tender and golden brown.
