Roast the Mushrooms
Preheat the oven to 200°C (400°F). Toss the mushrooms with olive oil, salt, and black pepper. Spread them on a baking sheet and roast for 15-20 minutes until golden brown.

Prepare the Eggs
In a medium bowl, whisk the eggs with fresh thyme, salt, and pepper until well combined.

Cook the Eggs
In a non-stick skillet over medium heat, pour in the egg mixture. Stir gently with a spatula as the eggs begin to set. Add the roasted mushrooms and diced taleggio cheese, continuing to cook until the eggs are fully cooked and the cheese has melted.

Assemble the Dish
On a plate, place a bed of mixed greens and halved cherry tomatoes. Spoon the mushroom scramble over the greens. Drizzle with sherry vinaigrette before serving.
