    Prepare the Beef

    Season the Normande Charolaise beef with sea salt and black pepper on all sides.

    In a bowl, combine olive oil, minced garlic, rosemary, and thyme. Rub this mixture all over the beef. Allow it to marinate for at least 1 hour, or preferably overnight in the refrigerator.

    Sear the Beef

    Heat a large skillet or grill over medium-high heat. Sear the marinated beef for about 4-5 minutes on each side until browned.

    Deglaze the Pan

    Pour the red wine into the skillet to deglaze, scraping up any browned bits. Bring to a simmer.

    Cook the Beef

    Reduce heat to low, cover the skillet, and let the beef cook for about 45 minutes to an hour, until it reaches your desired level of doneness.
