    Make the Base

    In a medium saucepan, combine the heavy cream, whole milk, sugar, and salt. Heat over medium heat until the mixture is warm and the sugar is dissolved, but do not let it boil.

    Prepare the Egg Yolks

    In a separate bowl, whisk the egg yolks until they are slightly thickened. Gradually add a small amount of the warm cream mixture to the yolks, whisking constantly to temper them.

    Combine Mixtures

    Once tempered, pour the egg yolk mixture back into the saucepan with the cream mixture. Cook over medium heat, stirring constantly until the mixture thickens enough to coat the back of a spoon.

    Add Vanilla

    Remove from heat and stir in the vanilla extract. Let the mixture cool to room temperature.

    Chill

    Cover the mixture and refrigerate for at least 4 hours, or overnight for best flavor.
