    Preparation

    Preheat your oven to 450°F (232°C).

    Season the Meat

    In a small bowl, mix together the kosher salt, black pepper, garlic powder, rosemary, thyme, and olive oil. Rub this mixture all over the prime rib roast, ensuring it is well coated.

    Roasting the Prime Rib

    Place the seasoned prime rib in a roasting pan, bone side down. Roast in the preheated oven for 20 minutes, then reduce the temperature to 325°F (163°C). Continue roasting until the internal temperature reaches your desired doneness (about 130°F for medium rare, 145°F for medium). This will take approximately 1.5 to 2.5 hours depending on the size of the roast.

    Resting the Meat

    Once the roast has reached the desired temperature, remove it from the oven and cover it loosely with aluminum foil. Let it rest for 20-30 minutes. This allows the juices to redistribute.

    After resting, carve the prime rib into slices and serve with your choice of sides.
