Preparation

Preparing the Ingredients

1. Wash the Blackberries

Gently rinse 4 cups of fresh blackberries in cold water and remove any stems or leaves. Pat them dry with a paper towel.

2. Preheat the Oven

Preheat your oven to 375°F (190°C) to ensure it’s ready when the cobbler is assembled.

Making the Filling

3. Prepare the Blackberry Filling

In a medium saucepan over medium heat, combine the blackberries with 3/4 cup of sugar and 1 teaspoon of lemon juice. Cook for 5-7 minutes, stirring frequently, until the berries begin to release their juices and create a syrupy mixture. Remove from heat and set aside.

Making the Cobbler Batter

4. Mix the Dry Ingredients

In a mixing bowl, whisk together 1 cup of all-purpose flour, 1 cup of granulated sugar, 1 1/2 teaspoons of baking powder, and a pinch of salt.

5. Add the Wet Ingredients

Add 1 cup of milk and 1/2 teaspoon of vanilla extract to the dry ingredients. Stir until just combined. Do not overmix.

Assembling the Cobbler

6. Melt Butter in Baking Dish

Place 1/2 cup (1 stick) of unsalted butter in a 9x13-inch baking dish and put it in the preheated oven until fully melted, about 3–5 minutes. Remove from oven once melted.

7. Add Batter to Butter

Carefully pour the batter over the melted butter in the baking dish. Do not stir.

8. Add Blackberry Mixture

Spoon the warm blackberry mixture evenly over the batter. Again, do not stir—the cobbler will bake up around the fruit.

Baking and Serving

9. Bake the Cobbler

Bake the cobbler at 375°F (190°C) for 40 to 45 minutes, or until the top is golden brown and a toothpick inserted into the batter comes out clean.

10. Cool and Serve

Allow the cobbler to cool for about 10–15 minutes before serving. Serve warm with a scoop of vanilla ice cream or a dollop of whipped cream, if desired.
