    Prepare the Lamb

    Preheat your grill to medium-high heat. Season the rack of lamb with salt and black pepper. Rub the olive oil and Dijon mustard all over the meat.

    Grill the Lamb

    Place the rack of lamb on the grill bone side down. Grill for about 15-20 minutes for medium-rare, turning occasionally until it reaches your desired doneness.

    Rest the Meat

    Remove the lamb from the grill and let it rest for 10 minutes before slicing.

    Make the Burgundy Dijon Gravy

    In a saucepan, combine the red wine and beef broth. Bring to a simmer and reduce by half. Whisk in the butter and Dijon mustard until smooth and thickened.

    Prepare the Asparagus

    Steam the asparagus until bright green and tender, about 5 minutes.

    Boil or roast the potatoes of your choice until tender. Season with salt and pepper.
