Prepare the Lamb
Preheat your grill to medium-high heat. Season the rack of lamb with salt and black pepper. Rub the olive oil and Dijon mustard all over the meat.

Rest the Meat
Remove the lamb from the grill and let it rest for 10 minutes before slicing.

Make the Burgundy Dijon Gravy
In a saucepan, combine the red wine and beef broth. Bring to a simmer and reduce by half. Whisk in the butter and Dijon mustard until smooth and thickened.

Prepare the Asparagus
Steam the asparagus until bright green and tender, about 5 minutes.

Cook the Potatoes
Boil or roast the potatoes of your choice until tender. Season with salt and pepper.

Serve
Slice the rack of lamb, plate it with the steamed asparagus, and serve with mint jelly and potatoes on the side. Drizzle the Burgundy Dijon gravy over the lamb.
