    Prepare the Tenderloin

    Preheat your oven to 400°F (200°C). Trim any excess fat from the beef tenderloin and tie it with kitchen twine for even cooking.

    Season the Beef

    Rub the beef tenderloin with olive oil, minced garlic, fresh thyme, salt, and black pepper. Ensure it is evenly coated.

    Sear the Tenderloin

    In a large oven-safe skillet, heat the remaining olive oil over medium-high heat. Sear the beef on all sides until browned, about 3-4 minutes per side.

    Roast in the Oven

    Transfer the skillet to the preheated oven and roast the beef for about 20-25 minutes for medium-rare, or until the internal temperature reaches 130°F (54°C).

    Rest the Meat

    Remove the skillet from the oven and add butter to the pan. Baste the beef with the melted butter and let it rest for 10-15 minutes before slicing.

    Serve

    Slice the Chateaubriand into thick medallions and serve with your choice of signature side.
