Blackened Yellowfin Tuna
Method
Preparation and Cooking
- 1
Prepare the Ginger Carrot Puree
In a saucepan, combine the carrots, grated ginger, and vegetable broth. Bring to a boil, then reduce heat and simmer until the carrots are tender, about 15 minutes. Drain and blend until smooth. Set aside.
- 2
Prepare the Green Bean Salad
Blanch the green beans in boiling water for 2-3 minutes, then transfer to ice water to stop cooking. In a bowl, combine the green beans, sesame oil, soy sauce, rice vinegar, and sliced scallions. Toss well and chill in the refrigerator.
- 3
Cook the Tuna
Preheat a grill or grill pan over medium-high heat. Rub the tuna steaks with olive oil and coat with Cajun seasoning. Grill the tuna for about 2-3 minutes on each side for medium-rare, adjusting time based on desired doneness.
- 4
Serve
Plate the blackened tuna alongside a generous scoop of ginger carrot puree and the chilled Asian green bean salad. Garnish with toasted sesame seeds.
